Water-soluble vitamin C, also known as ascorbic acid, is probably the best-known of all vitamins. It is mainly found in fresh fruit and vegetables, is involved in many metabolic processes and protects cells from aggressive oxygen compounds (free radicals). Unlike plants and most animals, however, the human body cannot produce vitamin C itself or store it. Vitamin C plays an important role in the formation of collagen, the most common protein in the human body and the most important component of our connective tissue. Vitamin C contributes to normal collagen formation for the normal function of blood vessels, gums and teeth, bones, cartilage and skin.
